I would never, ever, work somewhere with unlimited time off. It's a total scam. There's no way that doesn't come with unspoken expectations, guilt trips, peer comparisons, and all kinds of shit I want none of. I want to work what I've agreed to, and take no flak from anyone when I don't want to work.
